Healthy Double Chocolate Chip Cookies


These are my favorite chocolate cookies, and are perfect for a quick chocolate fix! I highly suggest using pureed medjool dates because they add extra moisture, but you can replace it with brown sugar if you want.

Substitute 3/4 cups brown sugar for the pureed medjool dates.
Use more or less chocolate chips based on your personal preference or add other add-ins like nuts!

Healthy Double Chocolate Chip Cookies

2 cups chocolate chips
1/2 cups butter
2 eggs
1 cup pureed medjool dates
1/4 cups brown sugar
2 teaspoons vanilla extract
1/2 teaspoons baking powder
1/2 teaspoons salt
3/4 cups whole wheat flour
1/4 cups cocoa powder
2/3 cups chocolate chips

Preheat the oven to 350˚F.

Melt butter and chocolate chips together. Mix the eggs, date puree, brown sugar, vanilla extract, and baking powder on high for 3 minutes. It’s very important to mix it for this long, so don’t shorten this step!

Fold the chocolate mixture into the egg mixture. Combine the salt, flours, and cocoa powder into a bowl.

Mix the dry ingredients with the wet ingredients. Fold in chocolate chips.

Drop balls of cookie dough on the cookie sheet about 2 inches apart. Flatten them slightly  (these cookies don’t spread or flatten much in the oven).

Bake for 8-12 minutes, depending on how thick the cookies are. The edges should be slightly crispy.

Cool for 2 minutes on the tray and transfer to cool completely on a wire rack.
