These delicious cookies have a gooey chocolate interior and taste just like hot chocolate! I made them for my family and friends, and they were gone within a day. They do freeze well, not that you’ll need to if your family/friends are anything like mine!
These cookies are best served warm (so the chocolate on the inside is melted and the marshmallow is gooey), so I recommend microwaving them for a few seconds if the cookies aren’t right out of the oven.
I used 1/2 of a large marshmallow for this recipe, but you can increase the marshmallow to chocolate ratio by using a whole marshmallow or half or a third of an extra large marshmallow. Just be careful – the bigger the marshmallow, the more likely it is to slide off the cookie.
If you have a blowtorch, you can use it to burn the outside of the marshmallow until it is a golden-brown.
Hot Chocolate Cookies Recipe
1/2 cup butter
1 3/4 cups chocolate chips
1/4 teaspoon salt
1/4 cup cocoa powder
1 3/4 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup brown sugar
1 teaspoon vanilla
1 large chocolate bar
Preheat oven to 325˚.
Melt together chocolate chips and butter. Set aside until cool.
In a separate bowl, combine dry ingredients (salt, cocoa powder, flour, and baking powder).
Cream together chocolate mixture, brown sugar, eggs, and vanilla. Combine dry ingredients and chocolate mixture until well incorporated.
The dough should be a very thick cake batter consistency. Chill for at least 2 hours. Drop 1 inch cookie dough balls on lined baking sheet and flatten slightly. Bake for 8 minutes.
Remove from oven and press a small piece of chocolate into the center and top with half a marshmallow. Bake for 3-4 more minutes.
