Espresso powder makes the chocolate flavor much more rich! I definitely recommend adding it in, even if you don’t like the flavor of coffee. I swear, you can’t taste it. However, you can leave it out if you want to.
The BEST Brownies
Makes 16 brownies
1 cup butter (melted)
1 tablespoon vegetable oil
1 cup brown sugar
3/4 cup white sugar
1 tablespoon vanilla
1 teaspoon salt
1 teaspoon espresso powder (optional)
1 cup flour
1 cup unsweetened cocoa powder
1 cup chocolate chips
Preheat oven to 350˚F. Grease a 9×9 pan.
In a medium bowl, combine melted butter, vegetable oil, brown sugar, and white sugar until combined. Add eggs one at a time and mix until well incorporated. Add vanilla and mix.
In a separate bowl, mix salt, espresso powder, flour, and cocoa powder. Gradually mix into the butter and sugar mixture until just combined. Be careful not to over-mix! Stir in the chocolate chips.
Pour the mixture into the prepared pan and bake for 20-25 minutes, or until the middle is just set. The brownies will continue to cook after they are taken out of the oven. Let cool. These brownies are best served warm with a scoop of ice cream on the side!
