These molten chocolate lava cakes with their rich, gooey center are delicious!
Use dark chocolate chips instead of semisweet chocolate chips for a richer, less sweet taste. If you want, add 1/4 cup of powdered sugar to make up for the lost sweetness.
Molten Chocolate Lava Cake
1/2 cup butter
1 1/4 cups semisweet chocolate chips
3/4 cup powdered sugar
1 teaspoon salt
2 egg yolks
6 tablespoons flour
Preheat oven to 400˚F. Grease 5 ramekins and set aside for later.
Melt together butter and chocolate chips together in a medium bowl. Mix in powdered sugar and salt.
Beat together the eggs and egg yolks. Add to the eggs to the chocolate chip mixture. Stir in the flour until combined.
Pour mixture into the ramekins until 3/4 full. Place on a baking sheet to prevent any spills. Bake for 11-15 minutes or until the sides are baked and the middle still jiggles. Let cool. Dust with powdered sugar and garnish with fresh fruit.
If storing: refrigerate for up to 3 days (though I have eaten them after 5 days and they were still ok) and reheat in the microwave for 10-30 seconds to get a gooey center.
